Slow Cooked Chicken Thighs With Vegetables & Balsamic


(Serves 2)

  • Good quality country bread – 4 slices
  • Garlic – 1 clove cut in two (don’t worry about peeling it)
  • Roi Extra Virgin Olive Oil
  • Your choice of topping: Prunotto Green or Red pesto, Castellino Semi dried tomatoes/ Grilled Peppers/ artichoke cream


Toast, grill or barbecue the bread until golden brown. Rub with the cut side of the garlic and then drizzle on good quality, fruity, extra virgin olive oil and spread with your desired topping. Remember you also want to taste the oil and the bread!
